An immensely popular sweet across India, Besan Ladoos are made with nutty fried gram flour mixed with Shuddh Ghee, Saffron, Cardamom and chopped Cashews shaped into balls of delight!
Made during occasions like festivals & weddings, however, you can always treat your family & friends to these aromatic & delicious ladoos. All you need is the following:

Ingredients & Measurements :
- Shuddh Ghee (clarified butter) – 125gms
- Unsalted Cashews – 50gms
- Gram Flour (sieved) – 200gms
- Pistachios – 1 tablespoon (chopped)
- Sugar – 100gms
- Saffron (soaked in 1tbsp warm milk) – 1/4 teaspoon
- Green Cardamom Pods – 6
Instructions:
- Take a small pan, put it on medium and roast cashews until they are slightly brown. Let it cool, and finely chop the cashews.
- Now take a wok and melt Shuddh Ghee on low heat. Add gram flour and fry until it darkens or approx 15 mins till it starts releasing the toasted aroma.
- Add in the toasted cashews and transfer to a mixing bowl. Leave until warm enough to handle.
- Grind the split cardamom seeds to a powder with 1 tsp of the icing sugar using a mortar & pestle.
- Now Add the remaining sugar, ground cardamom and saffron with soaking liquid. Mix the mixture well until smooth, and let it rest for a few minutes till it reaches room temperature.
- Shape the gram flour mixture into small balls (ladoos), about 3 cm in diameter, with your hands. If the ladoos are a little soft, chill for 10 mins to firm up.
Serving Suggestion:
To serve, press a few chopped pistachios onto each one. You can enjoy it for a week by keeping it in an airtight container a room temperature.
