Dahi Bhalle

Dahi Bhalle or Dahi Vada is a delicious and fresh dish from the Indian subcontinent. It’s a dish with fried dumplings dipped in creamy whipped Shuddh yogurt to create an amazing combination of flavours.

Ingredients Required:

Main ingredients

  1. Split black gram (urad dal) skinless – 1- 1.5 cups
  2. Shuddh Yogurt (Dahi) 6-7 cups
  3. Oil to deep fry vadas
  4. Salt as per taste

Spices and condiments

  1. Rock salt1 tsp
  2. Roasted cumin or jeera powder 2 tsp
  3. Ginger sliced into thin strips of 1 inch
  4. Chopped green chilli 2
  5. A pinch of Asafoetida
  6. Red chilli powder 1 tsp

Additional ingredients

  1. Raisins 15-20
  2. Fresh coriander leaves chopped 2 tablespoons
  3. Mint chutney to taste
  4. Sweet date and tamarind chutney to taste

Method

  1. First, soak the dal overnight in three cups of water.
  2. Drain off the excess water and grind the dal to the smooth paste. To this paste, add half a teaspoon of salt, half a teaspoon of red chilli powder, raisins and asafoetida.
  3. Heat some oil in a wok. Using the tablespoon, pour the batter into the hot oil and fry until it turns golden brown. The dumplings are called ‘Vadas.”
  4. Keep the vadas in warm water for about two minutes.
  5. Now, take the vada out of the water and squeeze gently. Keep aside.
  6. In another bowl, whisk the Shuddh yogurt properly. Add rock salt and salt to the Shuddh yogurt.
  7. Put the vadas on a plate and pour Shuddh yogurt on the top of vadas. Add tamarind and coriander chutney (sauce) on the top.
  8. Now sprinkle chilli powder and cumin powder on top of the dish.
  9. Garnish with coriander leaves and chopped green chillies.

• Dahi Vada can be a lot more innovative and healthier. The ingredients of Dahi Vada are quite healthy.

• In case you want an even more healthy version, you can avoid deep-frying. Instead of deep-frying the vadas, you can bake or air-fry them.

• If you are adding sugar, you can replace it with honey.

• Also, you can add additional nutritious ingredients like pomegranate seeds to enhance its nutritional value.
