Gajar Ka Halwa

A traditional Indian pudding made by simmering carrots. This Indian dessert never fails to impress! We are making this full-fat milk, there are other ways like condensed milk or khoya, but we’d like to stick to the traditional method.

All you need to make this delicious recipe at home is:

  1. Carrots – 500gm (peeled & grated)
  2. Milk – 1 litre
  3. Shuddh Ghee – 2 tablespoon
  4. Nuts – 7-8 (pistachios, cashew, almonds)
  5. Sugar – 150 gm
  6. Cardamom powder – 1 teaspoon

Instructions:

  1. Take a heavy bottom large pan, add nuts, a hint of ghee to fry them on low heat and set them aside.
  2. Add ghee to the grated carrot for a minute to fry and add milk.
  3. Simmer the carrots in milk until it evaporates and becomes gooey. (keep stirring)
  4. Add sugar and stir until sugar melts, then add Shuddh ghee.
  5. Cook until Halwa thickens and add cardamom powder.
  6. Voila! Delicious Halwa is ready to serve. Garnish it with nuts and enjoy.

Especially great during nice cold weather! Many people also love to add warm carrot halwa with ice cream.
