Gujarati Kadhi

Kadhi is a yogurt-based gravy dish to which Chickpea/ Besan is added, tempered, and simmered with spices. Gujarati kadhi is a sweet and sour version of kadhi. A popular Gujarati dish consisting of Buttermilk or Dahi and Gram flour is an essential part of Gujarati cuisine.

Ingredients & Measurements :

  • 1 ½ cups – Shahi Yogurt ( Dahi )
  • 3 cups Water
  • 2 Tablespoon – Besan (gram flour)
  • ½ Teaspoon – Ginger paste
  • 3 – Green chillies (Chopped)
  • ¼ Teaspoon – Turmeric ( Not required for white kadhi )
  • 2 Teaspoon – Sugar
  • Salt to taste

Tempering:

  • 2 Teaspoons – Ghee ( Clarified Butter) or Oil.
  • 2 – Dry red chillies
  • Pinch of Asafetida
  • 1 Teaspoon – Cumin seeds
  • 1 – Cinnamon stick
  • 2-3 – Cloves
  • 5-6 – Curry Leaves

Garnishing :

  • Cilantro

Instructions :

  • Take a deep pan, add water, Shuddh Yogurt, Besan (Gram Flour), and whisk or Use a Hand Blender to ensure a smooth, consistent lump-free thin batter.
  • Add Ginger paste, Green chillies, Turmeric powder (not required white kadhi ), Sugar and Salt to taste.
  • Heat the Ghee or Oil in another deep pan. Once hot, cumin seeds, curry leaves, dry red chillies, cinnamon stick, cloves and asafetida.
  • Add the batter to tempering, put it on medium heat and stir continuously; when it comes to boil, lower the heat and simmer.
  • Finally, add chopped cilantro and mix.
  • Delicious Gujarati kadhi ready to serve.

Serving Suggestion :

Kadhi is a treat to eat with Khichdi, Pulao and Steam Rice.
