Mutter Paneer

Mutter Paneer is a well-known dish of North Indian cuisine. It is prepared using green peas and paneer (cottage cheese) – use Shuddh Paneer for excellent taste. While there are so many paneer recipes you can find in the market, one that never fails the taste buds is this Mutter Paneer recipe. The recipe is also quite simple to make. It’s basically the comfort meal that you crave for every now and then.

Pro Tip In case you want a creamier version of the recipe, you can add cashew paste.

Ingredients

  • Sunflower/Refined oil/ 1 tbsp
  • Green cardamom- 2 whole
  • Peppercorn- 4 to 5
  • Roughly chopped onion- 1
  • Ginger cut into 1-inch slices- 160 gms
  • Chopped garlic cloves- 4 (large)
  • Green chillies chopped roughly- 1 to 2
  • Chopped medium tomatoes- 3 up to 400 GM’s
  • Cashews- 10
  • Ghee- 1 tbsp (Clarified butter)
  • Bay leaf- 1
  • Red chilli powder- 1 tsp
  • Coriander powder- ¾ tsp
  • Garam masala- ¼ tsp
  • Cumin powder- ¼ to ½ tsp
  • Turmeric powder- ¼ tsp
  • Sugar (optional)- ½ tsp
  • Plain yogurt- 2 tbsp
  • Salt to taste
  • Water- 1.25 cups
  • Shuddh Paneer- 250 gms
  • Frozen peas- ½ to ¾ cup
  • Cilantro (garnish)

Method
Star the recipe with Shuddh Paneer, remove from pack to use directly or you can soak in lukewarm water for a few mins. In a separate bowl, soak frozen green peas too for approximately 10 minutes.

Now, cook with the following steps to make a delicious serving of Mutter Paneer.

  1. Heat 1 tbsp oil in a pot or pan on a medium flame. When the oil is hot, add the cardamoms, peppercorns and cumin seeds. Sauté the mix until the cumin seeds sizzle and you smell the fragrance of the spices.
  2. To the same mix, add chopped ginger, garlic, onions and green chilli. Cook this mix until the onions appear golden-brown in colour.
  3. Now add tomatoes and cashews to the spicy mixture.
  4. Let the mixture cook. When the tomatoes become soft, keep it aside to cool down.
  5. Transfer the cooled-down mixture into the blender. Grind it into a thick paste and keep this paste aside to rest.
  6. A tablespoon of ghee (clarified butter) or oil is then taken on a pan. Here it is heated on medium heat. Bay leaf and red chilli powder are added to it one after the other respectively.
  7. Cook the bay leaf and red chilli powder until a nice bright red colour is seen.
  8. Pour the prepared onion-tomato paste in the pan and mix thoroughly.
  9. Next, add coriander powder, garam masala, cumin powder, turmeric, salt and sugar to it and mix again for a minute.
  10. In a bowl, whisk and stir the yogurt. This is done so that it mixes properly.
  11. Add water to the pan, and bring to boil.
  12. At last, add the Shuddh paneer cubes along with green peas. After stirring, cover the pan and allow to simmer for 6 to 7 minutes on medium heat.
  13. Sprinkle some garam masala and cream. Garnish it with cilantro, and your dish is ready to be served hot.
