Paneer Quesadilla with creamed corn

This spicy spread quesadilla is a super delicious snack. Packed with mouth-watering flavours which melt in the mouth with every bite. A must-try recipe over the weekend when friends are over for the game night. Happy Eating!

Ingredients & Measurements :

  • Shuddh Paneer – 400 gms (Shredded)
  • Pack of shredded Mexican blend cheese – 230 gms
  • Red Onion – 1 pc (sliced small)
  • Red Bell Pepper – 1 (sliced small)
  • Jalapenos – 2 (Roughly Chopped)
  • Taco Seasoning – 1.5 tablespoon
  • Chilli Powder- 1 teaspoon
  • Cumin Powder – 1 teaspoon
  • Cilantro – 1/4 cup (Chopped)
  • Broccolli – 1/4 cup (Chopped)
  • Corn – 1/2 cup
  • Cloves & Garlic – 4 (Finely Minced)
  • Black Beans – 1 can (drained and rinsed well)
  • Spicy Spread
  • Cream cheese (softened) – 1/2 cup
  • Green Chilli Chutney – 1 Tablespoon
  • Oil – 2 tablespoon
  • salt to taste

Instructions :

  • Heat a large skillet over medium-high heat.
  • Add oil, and once hot, add cumin and jalapeno.
  • Add onions, broccoli and salt and cook until softened.
  • Now add garlic, shredded Shuddh Paneer, taco seasoning, chilli powder, and cumin powder, cook for 5 minutes, and mix well.
  • Add corn, cream cheese, black beans, and cilantro and combine well.
  • Cook it on low heat until you assemble the quesadillas on another pan.
  • Heat a large flat pan and drizzle oil. Add 1 tortilla and cook both sides well.
  • Put a thin layer of spicy spread on one half of the tortilla and top it up with the cooked mixture of Shuddh Paneer and spices. Sprinkle cheese and fold over the other half of the tortilla.
  • Continue to cook both sides of the tortilla until golden. Cut into wedges and serve hot.
